El huarique que nunca cierra
A feature on a fictional all-night canteen (huarique) at the edge of the Surquillo market in Lima: since 1996 its owner, Charo, has never let the stove go out. The night has its own geography — chefs from Miraflores restaurants until one, then taxi drivers and nurses, then market porters at four — and the feature follows it hour by hour, quoting regulars (a combi driver, a nurse who likes being served 'al toque'), the secret of the hen broth, the free 'yapa' and Charo's refusal to close even for three hours: 'Si cierro, ¿adónde va a ir el taxista a las tres de la mañana?'
